Truffle Torte Trauma
My wife and daughter (who is a professional pastry chef) are wondering whether there is something wrong with the recipe for the Truffle Torte, as the chocolate ‘ganache’ element so often splits into an oily mess (wasting a lot of very expensive ingredients!). Is this a common problem, and what method would you recommend to bring the mix back.

My Icing hasn't set!
I make Delia’s royal icing ever year the same way and it either turns out too hard or doesn’t set at all. This year it hasn’t set. Is there anything I can do? Tempted to scrap it off and start again - really need help!!!
