Another gingerbread question!! Sometimes before rolling the pastry out it cracks on the surface. So when I bake it the cracks also show. I want a really smooth biscuit. Do you know why this is happening? Thanks
I am having awful problems making your pastry. I followed the recipe for apple pie. I made the dough not once, not twice..but 4 times and each and every time I was unable to roll it out. With the amount of ingredients used, 110 grams flour, 25g of both butter and lard, this made a very small amount of pastry and it rolled out very thinly and just keep tearing. When I watched the video, I noticed that the pastry ball that Delia put into the fridge did not look the same as the one she started to roll. Please help, what am I doing wrong.

Pear and almond cake calls for self-raising flour which is not available here. I have tried many times to make it using plain flour and adding various amounts of bicarb etc, but nothing seems to work well, Can you help?
