Making larger surprise cup cakes
Hello Lindsey, for the Chocolate Surprise Cup Cakes, I would like the cakes to be a little bigger, could I increase the flour and mash to 125g keeping the measurement of the rest of the ingredients the same. I did them this week end and they turned out great but would like the sponge a bit bigger if that makes sense.

I have just followed and made Delia’s classic sponge cake but it has not risen at all
Royal icing too stiff
Hi
I’m trying to royal ice a wedding cake and I want a flat surface.
I think my icing might be a bit too stiff and I’d like your advice on how to make it softer please.
Recipe is 2 large egg whites, 1lb icing sugar, 2tsp lemon juice and 1 tsp glycerine.
What can I add, and how do I add it please?

I am baking scones as spring is here! I live in France and it's difficult to find clotted cream. Is there any clotted cream recipe you might know of so I could make my own clotted cream? Totally understand if this is not something you can help with but thought I might ask! Thank you, Ed
