Level the icing on a wedding cake
Hi Lindsey,
Last question! Crucially, do you have any tips about how I can level the other two tiers ( 9 and 6 inch) ? I heard putting them in the fridge before levelling with a knife, is that true? Wouldn’t it make the cake more moist and harder to cut?

Icing the wedding cake
Hi Lindsey,
I forgot to mention that the wedding is on the 15th and I’m hoping to use royal icing on the cake. I’ve heard I need three layers of royal icing leaving a day between each for the layer to dry. Is that true?
Also, Is it possible to buy Delia’s royal icing? I’m nervous about using egg whites and my refrigeration options are poor ( I have a very small fridge for a three tiered cake).

Wedding Cake worries
Hi Lindsey,
I am baking a three tiered wedding cake ( 12 inch, 9 inch, 6 inch) using Delia’s recipe. The cakes baked fine, I made a mistake levelling the 12 inch with a knife and made things considerably worse! I tried to remedy the problem stuffing bits of marzipan on the bottom of the cake ( and when necessary, under the top marzipan layer) checking with a spirit leveller as I went, all around the cake. Obviously my marzipan is not evenly distributed and has a lot of crumbs in it to boot.
Simnel in a loaf tin
I would like to make a smaller simnel cake. Do you think doing half of Delia's recipe in a silverwood loaf lin, capacity 1 litre would work? Should I use 2 eggs and how long will it take to cook? Many thanks.
