Hello Lindsey for the family visiting over Easter, who are Vegetarians, I am making the following from Delia's Vegetarian Collection:
Gratin of Rigodoni with Roasted Vegetables (P96)
Soba Noodles with Soy and Citrus Dressing (P115)
Roasted Vegetable Couscous Salad with Harissa style Dressing (P 122)
Can you suggest either a chicken or fish recipe I could include with these for the non-vegetarians who woulds feel short changed.

Hot Cross Buns without the egg
Hello from Oz! I love Delia’s recipes, particularly the cakes that I can adapt for gluten free. For this hot cross bun recipe, I have to omit the egg (allergic), do I need to add an egg substitute? Many thanks, Julie

Hi Lindsey,
Just watched video on hot cross buns. I have always kneaded dough in the past. Never had much success. Noticed no kneading done so am going to have another go.
Just unsure about temperature of milk & water. Is there a more defined way of measuring? Hand hot could vary from person to person.

Using raisins a little past their use by date

I have some raisins which are quite old (well past their use by date) can I use these in the blueberry cake?
