Hello Lindsey I am making hot and sour prawns and expect to marinade for 48 hrs but the instructions on the fresh prawn labelling says eat within 24 hrs of opening - does the marinade preserve and extend their life once out of their vacuum packaging - I have 30 people coming to lunch on Saturday 1st April and expect to commence marinade on Wednesday? What do you think??!
This Christmas I made a sugarless fruit cake recipe, from one of my delia books, for my husband who has cancer. It was totally delicious and I would like to use it as a staple treat for the cupboard.

In the Old-Fashioned Rice Pudding can I substitute fresh cream for evaporated milk and golden caster for golden granulated sugar please? If so, do the measurements stay the same?
