In the Coffee & Walnut Cake recipe it says to preheat the oven to 170 degrees. Would you adjust this for a fan oven? My oven is newish so it still quite accurate. Thanks :-)

Hello Lindsey I am making hot and sour prawns and expect to marinade for 48 hrs but the instructions on the fresh prawn labelling says eat within 24 hrs of opening - does the marinade preserve and extend their life once out of their vacuum packaging - I have 30 people coming to lunch on Saturday 1st April and expect to commence marinade on Wednesday? What do you think??!
This Christmas I made a sugarless fruit cake recipe, from one of my delia books, for my husband who has cancer. It was totally delicious and I would like to use it as a staple treat for the cupboard.
As someone who is new to gluten-free baking, after a lifetime of "conventional" baking, I wonder if you could please give me some advice.
Is it essential to use xanthan gum, in order to achieve perfect results when using gluten-free flour, or is there an alternative? I am having problems sourcing it in my area.
