Sinking Fruit in Last-minute Christmas Cake

Hi Lindsey.
Happy New year!
I made about 6 of the last minute mincemeat christmas cakes. They were lovely and moist but one of them the fruit sunk to the bottom but the cake was nice. What would cause it to sink because it is a very wet mix?

Was it just one out of the 6 cakes? Or don’t you know about the others yet?
Was the mincemeat quite wet?

It was just the one cake. The mincemeat was very wet as well as the brandy added to it was very wet mixture.
I was puzzled by it.

Did you make the cakes in batches or at one at a time?
One at a time. The sinking fruit mystery Lindsey.lol.
I thought because the mixture was too wet or something .
Anyway we are both puzzled.

You’re right; a wet mixture can be the cause. As you have 5 successes and 1 where the fruit sank it could be the ingredients, the measuring out, or even the oven temperature that was slightly different for that particular one? Such a shame after all that effort, but I hope it still tasted good.
