Cock au Vin

Hi Lindsey I am planning to try Delia's Guinea Cock Au Vin which requires 1 pint red wine. I don't take alcohol in any form and wondered if I could substitute with a good quality chicken stock without seriously affecting the outcome or should I look to do something else without such a large input of alcohol which reduces the damage limitation to the overall flavour.

You could tell your guests it’s chicken stew or make up your own fancy name.
Add more mushrooms and call it Chicken Forestiere?
