My daughter has asked me to make a carrot cake for her wedding cake and I would like to upscale/downscale the Ultimate Carrot Cake recipe to make 6", 9" and 12" cakes. I have looked on line and found general guidance ie multiply/decrease ingredients by a certain factor, but can see that this general rule of thumb doesn't work for all cakes and wish that she had chosen a rich fruit cake as you have given all the adjusted ingredients/timings! I would be SO grateful if you could provide the upscaled/downscaled ingredients for the Ultimate Carrot Cake please as being a wedding cake I really want to get it right! Thank you very much indeed.
