Moudy Marmalade
Asked on 14 Jan 2017 by zebra
Horror of all horrors! I made my usual batch of Seville Marmalade last year [2016] and went to use the first jar this morning - having made a bumper lot in 2015.. Every single jar had mould growing around and under the waxed discs. OK - I may have made an error - although I'd never admit to it :-)) Can I scrape off the mould in each jar? Would I have to reheat and re pot the marmalade? It's all so distressing.
Hello,
If you have a moldy surface on sugary preserves you need to remove the mould and a few centimeters below it so that you remove any of the spores that may be there. You can use it one jar at a time, removing the mould as you go. I wouldn’t re-boil it this far on. I would only do that soon after a batch is freshly made.
Kind regards

Thanks vey much for that answer - I feel a lot less disappointed now,
