Making Delia's chocolate truffles
I have another problem with the truffles. Either the mixture is too soft to shape into truffles - i.e. when it's just been made it has a consistency like warm nutella; or, after being in the fridge, it is too hard to shape and a teaspoon just takes chunks out of the mixture in the bowl. When I try to shape those I can't as it's too hard. What should I do?
Just now, after the being in the fridge it was too hard, so I warmed it in a bain marie again. Then it looked like it had separated, so I mixed it in a mixer and now it looks fine but is at the warm nutella stage again!
