I am making my/your beloved red onion and goats cheese tarts, as usual for our Christmas party. I was wondering if I could freeze them? Party is on Saturday and I seem to have started ahead of time, making the pasty and caramelising the onions. I think I had the idea of freezing the tarts, as one can do a quiche but am now realising that the pastry cases are baked blind etc so now I am not sure to what stage I can go prior to freezing or storing in airtight containers. Please advise!
