Etty's sausage rolls and Delia's Coffee and Walnut Cake for my daughters Birthday

Hope you and your family are all well.
May I ask a question relating to sausage meat please. I purchased some of the excellent Lane Farm sausage meat with onion and sage Delia recommends for our stuffing at Christmas and also for Etty's amazing sausage rolls. Now I've got two tubes of the sausage meat left over in the freezer (it was fresh when it arrived in December and I froze it straight away). Would it still be okay to use it? Its my daughter's birthday next week and she's requested Etty's sausage rolls with her birthday tea (along with Delia's Coffee and Walnut Cake - the new version with the mascarpone - FAB).

General freezing guidelines on sausage meat say that you can home freeze it for 1 – 3 months, but that is because of the quality. It’s not because the sausage meat is not safe to eat (once cooked of course).
As long as there is no visible sign of deterioration, and you defrost it overnight in the fridge, then make and cook your sausage rolls the next day they should be perfectly good.
I think your daughter is going to have a lovely birthday.

Hi Lindsey, just wanted to let you know both Etty's Sausage Rolls and the Coffee and Walnut Cake were a rip-roaring success! Thank you both so much. I made a larger version of the C&W cake - 20cm variety - using Delia's Silverwood tins and liners. Fantastic. Those liners are a god send ! Have a great summer.
