Hi Lindsey I made the one with the masapone and it was in a airtight box in the fridge
With this sponge we find that the mascarpone makes the sponge quite moist in the fridge but it may be that your sponge was over cooked. For the topping, perhaps you added a little too much milk to the mascarpone.
If you haven’t seen it, this cake is included in the cookery school where you will see the texture of the sponge and the consistency if the topping.
Most sponges are best eaten within a couple of days and this particular one has to be stored in the fridge because of the fresh topping. We often make this one on a Friday for a Sunday and we find it keeps well. The mascarpone topping darkens a little and some of the moisture goes into the sponge but it’s good.
