A sugar and spice question! I want to make the chunky apple cake but, as usual, I cannot source a couple of the ingredients. One is the soft brown sugar, I can get Demerara and the ordinary sugar is almost caster sugar as its quite fine, the Demerara is quite coarse. Secondly mixed spice, I have got round cloves, ground ginger, cinnamon sticks and whole nutmeg. Do these constitute mixed spice or is there another spice that should be included?
