Choosing a palette kiife
Hey there Lindsey
A while ago my 20 cm palette knife broke and I asked you about the serrated knife Delia uses but can't find Victorinox anywhere. Since then I've not been able to find a decent palette knife anywhere until I've seen three styles today. One is a serrated one but the blade isn't very flexible, one is straight edged and flexible but has a 'step' (I'm sure there must be name for it!) from the handle to the blade, the last one was plastic and rather narrow, all were with about a 20 cm blade. Out of this wonderful selection which would be most suitable?
Sorry to bother you with what is probably a trivial question but from my experience here they may not get any more in so I want to try and get the right one.
Kindest regards

Hi Wendy,
Unfortunately Victorinox stopped making the serrated palette knife.
Out of the three you suggest I would choose the angled one, or keep on looking. The angled blade does take some getting used to but with practice they are useful for icing and lifting.
Stiff palette knife blades are quite unforgiving when you are icing / spreading. Silicone / plastic palette knives are useful with regards to protecting non stick surfaces but they are generally thicker and its not so easy to get a smooth finish.
Best wishes
Lindsey
Thank you, as ever, for your useful guidance. W.
