Thanks for your reply on suet. Can I use lard instead of suet in pastry?
I haven’t used it, but if you freeze, grate and keep it dusted with flour and chilled before you mix I think it will work. It’s similar to the way Delia makes rough puff pastry, which we show rough in this cookery school video.
I would use dripping if you were making something with beef.
