Question re Christmas Cake

dried fruit-help!

I have started a baking business, making fruit cakes and need to source the best cleanest fruit so that the time spent picking out the gritty bits is kept to a minimum. Any tips on cleaning it more quickly, or sourcing? So far waitrose seems the best but even then it's time consuming and tedious.

Classic Christmas Cake

Hi,
I'm just about to start my Christmas cake however I wanted to know how much brandy I should put in to the cake once it's cooked - I don't want the brandy over powering the cake!
Also is it too soon to start now?

I wonder if you have ever heard of something called Pestle Soup?
My Mum was from Norfolk and she used to make it. It was lovely but she died a very long time ago when I was young and I never got the chance to ask her how it was made. I think it involved a ham bone?
I wondered if you'd come across it in Suffolk? I've never been able to find anyone here in Cumbria who has heard of it!

Firstly i just have to say everything i cook from your books always receive compliments and they are so easy to follow so thankyou for making my kitchen life enjoyable! i have been officially chosen to do the "christmas day" festivities and as cheese lovers the board is essential!! and i have made your spicy pickled pears ready! but what else would you have to make it extra special,so its more than just cheese and crackers!! thankyou!! biggest fan...Tammy.
