Bread flour - own brand variable quality

Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

Although more expensive, I usually use Waitrose very strong Canadian flour (15.0% protein). You might also try Lidl own brand whch also works well, but lower protein level.

I have seen the Canadian flour from Waitrose recommended on several bread blogs so I purchased some last week but haven't used it yet. I am interested to see how it performs as I make sourdough bread on a regular basis. I have used Lidl bread flour before and am quite pleased with it and the price is extremely good! If the Waitrose flour is better I will use it but the cost of it is a lot more than Lidl's so it has serious competition.

I've never made sourdough, having a machine it isn't really necessary, so I cannot comment. I have ordered some gluten flour from the local bulk powder shop in town but I forgot to check that it is wheat-derived. I'll try Lidl and adding gluten to the cheap own-brand.

I also have a bread machine, but I make sourdough bread because it is a different type of dough/bread, much nicer than anything I could make in my Panasonic machine. I still make loaves in the machine , which when sliced will fit easily into the toaster, but for bread to enjoy I make sourdough. It really can't be compared to machine made bread, as different as trying to compare white cottonwool bread from the supermarket to a home-made loaf from a bread machine!
