A smaller stuffed bird this Christmas!

I’m going to cook a 3.5-4kg turkey. How much sausage stuffing should I make and will the stuffing be fully cooked as it should only take a couple of hours to cook the turkey

Hello Lindsey. Thought I had my Christmas menus sorted and then along comes those stunning recipes from Alex Mackay which will go down a storm with my non-meat eaters and thank you.
Just one issue for me and that's the red wine sauce. My home is an alcohol free zone and I wondered if you could suggest a substitute.

Good Quality Marzipan
Where can I get good quality marzipan for my Xmas cake decoration? Supermarkets seem to have additives that I try to avoid
Adding the flour to the Christmas Pudding mixture
Re Traditional Christmas Pudding Recipe: I have a copy of Delia‘s Christmas Recipe Book and in that version of the Christmas Pudding recipe it tells you to put ALL ingredients in and soak overnight before putting in a basin. However the online recipe says you put the flour in the next day AFTER soaking the other ingredients overnight. This is quite a different step and not a typo I think. Which is correct/better?
Missed out the eggs in the Christmas Pudding!
Hi I have cooked my Christmas pudding and left out the eggs so it is crumbly and soggy. Can I remix everything and add the eggs and cook again please ?
