Thanks for the microwave tip, will try that one out too. I love aubergines and I like them best with that smoky flavour so I do as Bolas does and fry them with a high heat on the griddle pan. I use an oil spray so its not too greasy, but will admit that sometimes I forget to oil them and they do just fine too. I also spent days trying to fry them in oil with the result of them soaking it all up. Yuk!
I have always been told to salt courgettes so maybe its a continental thing? Not that I bothered to, mind.
