Garlic: is there such a thing as too much?

Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

I have not heard of removing the green middle. I agree with everyone that there is no such thing as too much garlic especially given its high nutritional value and claim to be a great cancer-fighter. I have a garlic soup recipe which I can post in my recipes if anyone is interested. I make it quite regularly as we all adore it. Naturally it uses lots of garlic but no-one would ever guess just how much is in it.
A while back I posted a request for ideas of what I could do with 5 lbs of fresh peeled garlic. Well, I froze the whole lot and have been using it as needed. I have just a few ounces left. It freezes wonderfully with no obvious loss of flavour.

Hello Janice, how's the recipe coming? I was pleased to read that freezing the garlic was a success, we grew a few big bulbs this year and hung several up to dry, not knowing it would freeze. I'll have to try that next year.
