I have not heard of removing the green middle. I agree with everyone that there is no such thing as too much garlic especially given its high nutritional value and claim to be a great cancer-fighter. I have a garlic soup recipe which I can post in my recipes if anyone is interested. I make it quite regularly as we all adore it. Naturally it uses lots of garlic but no-one would ever guess just how much is in it. A while back I posted a request for ideas of what I could do with 5 lbs of fresh peeled garlic. Well, I froze the whole lot and have been using it as needed. I have just a few ounces left. It freezes wonderfully with no obvious loss of flavour.

I was pleased to read that freezing the garlic was a success, we grew a few big bulbs this year and hung several up to dry, not knowing it would freeze. I'll have to try that next year.
