chipotle paste

Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

Chipotle paste is made from jalapeno chillies that have been smoke-dried.

If you are stuck you can use dired jalapeno chillies and crush/grind them along with some smoked paprika. You end up with a powder which will keep for a very long time. If you really want a paste you can make it by adding some light oil, sunflower or rape seed (canola).

It will be dark red, very piquant and smokey. It's not the same but it is a good alternative.

Chipotle

I was going to suggest smoked paprika (one of my favourite spices at the moment) with a bit of dried chilli. It tastes the same.

I am glad you agree with my idea Essex girl. However, because chipolte is smoke dried jalape&"241;o they are very dark, almost black, so the mixture it will never taste the same or be the same colour but it is a good substitute if, as is my case, you can't get it in the shops.

Here is France it is considered to be 'très exotique' along with a lot of other things that are eady to get in the more cosmopolitan England. Here it is almost impossible to get hold of, particularly in rural areas.
