Egg whites

I always add a pinch - a small one - of salt when I whip egg whites; it stabilises them.

I would never have the patience to add sugar by the teaspoon. Oh Dear! I use something much bigger. And I am gentle with the mixer at that stage. The sugar is supposed to be folded in.

I use cornflour and vinegar in a Pavlova, but not in meringues. They are not the same thing.

Welshcookie, you make an Australian style Pavlova...I prefer the way Delia does it in her Delia Smith's Complete Illustrated Cookery Course... no added extras in hers. She basically handles both in the same way.

Yes, but just as people mess about with a Yorkshire Pudding recipe (very British) there is no reason why Delia can't do a Pavlova the way she prefers.

I actually did a Pavlova in Oz for a gathering and it got soooo many compliments (they didn't know I'd done it, they thought my friend had made it). I ended up telling them how Delia does it.
