Poached eggs

My favourite lunch.
I just bring the water to simmering point only.
Crack your eggs into a little cup or saucer before putting into the water, this helps to get your egg into the water slowly.
Stir the water and then carefully add the eggs, don't let the water boil rapidly just simmer, the eggs will float when just cooked.
Carefully place cooked eggs onto kitchen towel and pat away excess water, you can now cut to shape if you want but I don't bother.
PS Place in iced water if you want to cook them earlier and then put into simmering water for 30-45 seconds to reheat.

Delia does say, after the initial minute's simmering to remove the pan from the heat. It works for me.
