Left over mincemeat

Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

Got half a jar of mincemeat in the fridge leftover from Christmas. Any ideas other than mince pies?

Mincemeat

Muffins. Add to a fruit cake mixture. As it has so much sugar in it I never bother to keep it in the fridge. Add a bit of brandy or rum and it will keep for ages and ages. And another age.

Thank you all. Almond and mincemeat crumble it is! Like the other ideas though, will keep them in abeyance for next year!

Mincemeat Crumble

I made that the other day when some friends came to eat. It really is delicious and the mincemeat is much nicer with the added apple. I also put some glace cherries in the mixture. Yum.

Made bread and butter pudding in the end. Added a little Irish Whiskey to the mincemeat and spread it between the layers of bread. OH says its the best bread and butter pudding he's ever had! That could be the whiskey talking though!!!

Left over mincemeat

I'm told it is delicious with rice pudding. One of my French neighbours loves it and I gave her 2 jars last December. She was over the moon. I can't eat the stuff but I really enjoy making it. I have added mincemeat to a Simnel cake as well and that was well received too.

Left over mincemeat

This last Christmas, instead of making mincepies, I cut up Bramley apples into smallish chunks and parcooked them in butter. Made shortcrust pastry for a plate pie and layered mincemeat/apple in it. Didn't add any sugar as the mincemeat is very sweet anyway but you could sprinkle some brown sugar in the apple chunks with some cinnamon. It was lovely.

One of my favourite Delia recipes using mincemeat has got to be Chunky Apple and Mincemeat sponge pudding, served with real custard sauce.....so
delicious.

Winter cupcakes

My local cookshop posted a lovely idea. Look up The Good Cook Shop Southsea and go to 2012 on the timeline. They were delicious!

Sorry only just seen this....

175g digestive biscuits
75g butter
half jar or whatever you have of mincemeat
55g sugar 350g full fat cream cheese
150ml double cream

Crush biscuits, melt butter, add biscuits to butter and press into a 20cm loose bottom tin.
Mix together sugar, cream cheese, mincemeat.
Whisk cream to soft peak stage and pile on top of base mix.
Chill for a couple of hours or over night.

This is so easy as you can see and is very nice.
We often have it for boxing day pudding.
