Gravy has beaten me to it with fuelliettes, using turkey or left over chicken.

rissoles, for chopped left over lamb/beef.

and also delias shepherds pie with leeks on top with leftover lamb/beef.

singapore noodles with leftover pork.

spanish torilla omlette, for using up almost any fridge oddments, and bits of ham/bacon/chicken.

bread and butter pudding, not only good for using up stale bread, but tea cakes or hot x buns. personal favourite is the marmalade recipe adapted to what i have to hand.

If boiling and baking a ham over christmas.

1. pea and ham soup (fresh shelled pea soup - using extra ham).

2. Ham croquettes, which are equally good with mashed potato rather than bread.



Also turkey (chicken) and leeks flan, is a good user upper dish, freezes well too.

chinese stir fried rice.

using cold leftover rice (stir fried to hot through)

you can use any left over prawns from a prawn platter and any other leftover meat, chicken/turkey/pork.

To use up any leftover bread I make Delia's Spiced Bread Pudding without the Brandy Cream. I serve it cold cut in big slices.

I regularly make Delia's leek, potato & cheese souffle from Happy Christmas. It isn't just at Christmas that I often have these lurking in the fridge either - it is a great recipe all year round. chillie

Leftover recipes

I use Delia's Creamy Chicken Curry recipe form her original book, Complete Cookery Course. These days rather than wait for leftovers, I tend to buy a ready roasted chook from the supermarket and use a tub of crème fra&"238;che rather than cream. I think it was in Delia's One is Fun that she said if you were unhappy using cream use an alternative, even water would do. This is always a great standby and makes great lunch packs too.
