Thank you Delia

I have never been able to master the art of "baking blind" my pastry cases without them shrinking. I tried Delia's tip of freezing the case before baking and hey- no shrinking. Wonderful :-). Cinnamon

Pastry cases

That's great to hear Cinnamon... I've not tried it yet. Encouraging to know that it worked for you. Definitely going to try that then. What did you make?

How long for?

An interesting idea that I would like to know more about. How long do you put in the freezer for please?? I have looked on the site and can't find any info on it.

Freezing Pastry

Jag, if you've missed the cookery school lessons... you will find the Cookery School tab at the top of the page beneath Delia's picture and name. They are really excellent... well worth watching. But here's the link for the one explaining about freezing the pastry.

Thanks Honey (:o{)

Yes I see that thanks Honey and will try and catch up when and as time allows me to. You know I really cannot believe just how quiet this site is now!! Remember the days when people hand trouble trying to keep up with the posts because they moved so fast?!

Cheers,

I made lemon meringue pie as it's my husband's favourite. Always had to make sure the meringue covered the pastry in the past as the edges were so bad but showed them with pride this time. Lots of excellent advice and tips on those videos, Jag. :-) Cinnamon.

My all time favourite taste sensation.

Now that we've settled in to or new home, I need to devote a kitchen cupboard to jam jars. Need to make some marmalade and lemon curd, and finally get round to making Bramble's and Ling's ginger lemon curd.
