Hello Delia,
I would love to know why the ingredients (apart from the spices) for the Dark Jamaican Gingerbread in your new book are approximately half the weight of those in the version in your original Book of Cakes but the tin size and cooking time are unchanged? Thanks, Andrea

Do you have any tips for making pastry for pies etc in my food processor? The thing is, I am in my early 40's and this is the only thing I am still nervous about making in case it goes wrong, and don't to buy ready made. Also, as wanting to maintain my weight, would light butter etc work?

I would like some ideas for inspirational rice dishes, my OH is not a fan of rice - I do like it, i was after something a little different to the same old plain boiled (in stock) or mixed veg rice. Also what are your tips for making the perfect fluffy rice.

Blueberry & Pecan Muffin Cake

Hi Delia,
I've been following your Cookery School regularly and have tried to emulate one or two recipes. Recently I tried out your Blueberry & Pecan Muffin Cake, but with a few substitutions. I couldn't source fresh blueberries so I used a black grape variety that is available in India. Also, instead of golden castor sugar for the batter, I used crushed brown sugar. Apart from that, I tried to follow the recipe closely. My muffin cake turned out very airy, like you said, but was a little moist in the areas where the grapes were. Is there a different procedure to be followed for grapes? How can I avoid the moistness?

following on from a thread about breakfasts - and eggs seemed to feature a bit. And i know eggs are specific to breakfast, like quiche and and tortilla.... even baked cheesecakes.

Ideas

Hi Delia. Can't join in with you web chat as it's my birthday and going out. I have to help with a party at the end of May and would like to start preparing now. Any ideas for stuff to go in the freezer (apart from quiches, sausage rolls etc)? I'm sticking to the savouries. Can you freeze canap&"233;s and the like? I think most of it should be finger style.
