Haven't a clue what galangal is, or need to know what to use if you can't buy creme fraiche locally? We're sure our knowledgeable members will be able to point you in the right direction...

Why do all recipes say cut in quarters down to but not through the base?

It is only very rarely that I use more than a quarter & to extract this would mean dislodging the whole Lemon. I cut in eighths & find this more convenient

Tim -- probably just my ignorance but what is a 'preserved lemon'? I remember those ghastly slices that pubs used to put into drinks - came in a plastic tub and should have been sent to landfill, not the pub. Jif, etc., is OK in its place but we always have a lemon in the fridge. I also have a big 1kg tub of citric acid (Ebay) and that is good for use descaling, bathroom cleaner and food use.

Anyway, do please enlighten me and if possible give the name of the product and the main ingredients marked on the pack.

Preserved Lemons

Having just bought a tagine and noticing that preserved lemons are used in many moroccan recipes I am about to make a batch myself and have also noticed that many recipes call for the lemons to be quartered almost but not quite through to the base hence still leaving them whole, then sprinkled liberally with salt. Left whole in this way and then tightly packed in preserving jars it's a quicker way of extracting the juice. Some recipes also include herbs & spices (cinnamon sticks/dried red chillies/bay leaves/whole black peppercorns etc) and I would be interested to know tim88 if you add any of the above herbs & spices when preserving lemons.

PS But WHY cut as said? MUCH more difficult to pack & use.

Thanks for the links Tim. No problem with the BBC Good Food link but had problems accessing the Photobucket link.

Sorry I cannot answer your question as to why the lemons are cut as said and totally agree with you that cut and prepared in this way they are more difficult to pack & use.

So........tomorrow when I preserve the lemons I will do the same as yourself and cut them into eighths.

No apologies needed, Tim. Both urls work for me but they are not embedded as html links so you need to 'copy' to clipboard, insert into browser and then 'go'. There are some 'quainteries' about this forum software but it isn't going to change so you just work-around.
