There must be an easy way or ensuring that your cake rises evenly and not like a mountain. All the cake pictures I see are nice and flat. Do they just cut the top off before they decorate it?

Check your oven temperature is correct, with a thermometer.

I take it we're talking about fruit cakes. Yes, some people do level the top off if it rises too much, then they turn it upside down and decorate the bottom.

or if its a victoria sponge type cake, take a spoon that has been dunked in warm water, and make a tiny dent in the centre of your cake mix, and swirl it outwards, then any rise should level off during the cooking process.

Thanks for the replies. Yes I did mean sponge cakes (and cup cakes too). I will check my temperature and try the warm spoon idea. Does having the oven set to the fan make a difference?

Yes the fan does make a difference. Set it about 20 degrees lower, but consult the handbook for more accurate information.
