home made marzipan

Help, Ive just made Delia's marzipan and followed the recipe to the letter and my marzipan is lumpy. Should I have sieved the almonds before adding them. I have also tried to smooth it out a little with a machine but its not done a lot.

Lynny68 I assume the lumps are due to the almonds not being well enough ground? The only thing I can think to suggest is to roll it all out and thus crush the almonds, if that will work. You could then gather it together and re-roll so that the almonds mix well into the marzipan. Otherwise make the whole lot into little balls and cover with chocolate for Christmas petits-fours.

I read your post rather differently. I assume you have used ground almonds. Remember to add almond essence because American almonds are almost tasteless. It sounds as though your marzipan is too dry. Do you have a Kenwood mixer or similar?

Put the marzipan back in the mixer bowl and with the motor running add a little beaten egg, teaspoon by teaspoon until the texture is right.

Try not to knead it by hand until smooth as the marzipan may become oily if it gets too warm.

The effort is worth it as home-made marzipan is streets ahead of shop-bought. And then some more!

Ground almonds do not have to be sieved.

I have made this several times and have never had a lump problem? did you use shop brought ground almonds? or did you grind the nuts yourself? that could be the only thing, that you still had large lumps left? other than that I am not sure what went wrong.

This recipe is so worth doing it is far superior to shop made.
