Sri Lankan Curry with Coconut Sambal

Love Delia's recipes, but her Sri Lankan Curry recipe in the newsletter of the 15th August, 2013, is NOT a Sri Lankan Curry!
No Sri Lankan worth their salt would used a MADRAS (or any other Indian curry powder) for a curry!
We have our own, toasted curry powder, which is totally different to the Indian ones! Just because coconut is added un some form, does NOT make it SriLankan!
As for the Coconut Sambol, Delia has left out several viatl ingriedients!
Dear Delia, if you love this curry so much, please give it a different name!


sri Lankan Curry

I made it last weekend. It was YUMMY. (I'm sure even better with the proper spices - but still delicious!)
I did't add the raw onion though - wasn't sure I like the idea.

Sure it was! It was a Delia recipe!
My point is that it is NOT a Sri Lankan curry by any stretch of the imagination!


Sri Lankan Curry mix?

Hi Carroty - I'm a keen curry cook, but can't say I'e ever tried an authentic Sri Lankan curry - you wouldn't happen to have a recipe for the curry spice mix would you? Most of the ones I cook are Bangladeshi, I think - though I've tried a Malaysian one, with some success, and Thai, though not so keen on Thai food. Thanks if you can help!


Sri Lankan Curry Mix

Hi Darkginger!
I don't know where you live, but most Asian Food shops tend to sell Sri Lankan Toasted curry powder. You can also buy it very easily on line.
However, if you wish to have a go at making your own, here is the recipe!

I have scaled it down, but it will still make a large quantity.


1/2 cup coriander seeds
1/4 cup cummin seeds
1/2 teaspoon fennel seeds
1/2 teaspoon fenugreek seeds
1 piece of cinnamon (about 1 inch)
1/2 teaspoon whole cloves
1/2 teaspoon cardamon seeds
1 tablespoon dried curry leaves
1 teaspoon chilli powder (optional)
1 teaspoon ground rice (optional0

In a dry pan, roast the following separately: coriander, cummin, fennel and fenugreek, stirring constantly until each one becomes a fairly dark brown. DO NOT LET THEM BURN!
Put into grinder/blender with the cinnamon (broken into pieces) cloves, cardamon and curry leaves. Blend until finely powdered. Combine with chilli powder (if using) and ground rice.
The ground rice acts as a thickner.

Sri Lankan curry

Thanks so much for that spice recipe - I tend to make mostly chicken curries, so a recipe for one would be very much appreciated! Am in the UK for another week (before heading back to the wilds of the west of Ireland, where spice etc. shops are thin on the ground) so will be stocking up with ingredients to take back with me this week.
