I have just made Delias recipe for pavlova. I had 5 egg whites left over, from a lemon tart last week.l put them in the freezer.I cringe when I see cooks on tv washing egg whites down the sink, its such a waste, so now my pav is cooking, will be great with strawberries and whipped double cream for tomorrow's nexties. And so summary, now summer has arrived in Inverness.

Egg whites

They whip up especially well after they have been frozen and thawed. I always add the smallest pinch of salt when I whip whites.

Try it! Only a little bit, it stabilises the beaten egg whites and helps them whip up faster. I thought everybody did it!
I certainly have never gone to the faff of rubbing the bowl with lemon juice as is sometimes recommended. Just use a clean bowl. Not a speck of egg yolk.

I always add a pinch of cream of tartar when I whisk egg whites, I too thought everyone did that !
