Hello, I'd like help locating a certain sized roasting tin (with a rack, ideally) that Delia specifies in her recipes. I have a large 14" roaster, but for her 'Fast Roast Chicken' (the size of bird Delia categorises as her 'mid week chicken') and her Duck with sour cherry confit recipes, I've had trouble locating the specified equipment, namely: A solid-based, flameproof roasting tin measuring 9 x 11 inches (23 x 28 cm), 2 inches (5 cm) deep.No luck on Amazon (there's a cheap one, but it doesn't come with a roasting rack - which I'd certainly need for the duck) and not being particularly crafty, I don't fancy fashioning one from aluminium foil. Can anybody help or suggest a workable alternative?Thanks, Sarah.
Relax!!!You are after a roasting tin, to cook a chicken. Any old roasting tin will do. Nothing will go wrong if the tin is not a specific size. Just go into a kitchen shop and choose the size you will find most useful in everyday life. All you have to think about is whether you want a cheapo one or one that will last. You can usually buy a rack separately, or you can put the chook on a scrunch of foil, or an upturned saucer if it is really necessary to lift it off the tin. I possess a rack. I wonder, if I have used it more than a dozen times, though some people use them often I presume.
But be aware, Woody Allen's got nothing on me in the anxiety/neuroses stakes.I suppose I'll continue to behave in the kitchen as I do in real life. In a state of mortal terror.I will do as you suggest though, and not be so particular about getting exactly the right size tin.
