New knife set advice

New knife set advice

I'm looking to buy a new knife set and would be grateful if anyone could recommend a great set. I currently have a set of Sabatiers, 1 is now missing so it's a good excuse to buy new. I found that these needed sharpening frequently and was wondering if spending more would actually mean better quality. Please help? Thanks.

Knife advice

Grrrr - just lost my reply - oh well, here we go again.

Sue-Anna, all knives need to be sharpened on a regular basis. I have a set of Sabatier knives (at least 25 years old) and I regularly do a "top up" sharpening with a steel to keep them well-honed. They are regularly sharpened with a whetstone (about once a month) and although I'm more than capable of doing this myself, it's a job OH loves to do for me. I tend to use the steel a couple of times a week (depending, of course, on what I'm using the knives for.) Why not just buy the knife that is missing or, if you fancy a whole new set, feel the balance in your hand and see how they feel before your commit your money to a whole new set.

Sound advice above. My butcher friend says ALL knives will need to be sharpened and you really can do it yourself at home, so just buy the one you feel comfortable with.
Last year whilst in France I bought three or four kitchen knives at a car boot sale. After a good sharpening they are really good to use. (man at passport control was not happy with 8" blades in the car though!)

Thank you for the advice. I'm going to order a new sharpener after reading some good reviews and hope it does the trick. I only have a steel, not a whetstone so should probably invest. Thanks again.
