Can someone tell me if there is any reason why one should use exactly the size and or shape of a cake tin that is quoted in a recipe please.
The size of tin does matter, as changing it will affect things like the depth of mixture, which will alter the time/oven temperature required.
The best way to understand this is to do it and see what happens. But don't do it when the finished result has to be perfect!
