Can anyone tell me how to make soft ice cream? every time I make and freeze it, it goes as hard as rock,and I would like to make it to store in the freezer,would like any ideas. thanks in advance
Adding some alcohol helps as it acts as an anti-freeze as well as adding flavour.

Take it out of the freezer and put in the 'fridge to "ripen" (or soften) for half an hour before serving.
