eggs in cookery

can anyone tell me what size eggs to use in recipes when all the recipe says is to use 2/3 eggs, is there a formule eg for sponges and so forth.

It usually makes little difference what size you use. Remember eggs go from double-yolkers through Extra-large down to pullets eggs. For recipes where it matters use a 60g egg. For sponges the recipe goes - take the weight of three (or whatever) eggs in butter and flour and sugar etc.

That pre-supposes that people keep lots of packs of different size eggs. Most people, I imagine have one or two sizes, so use what you have, otherwise it all gets a bit silly!! Cake recipes need to be accurate but a bit extra or less hardly matters elsewhere.
