There are very good reviews at Amazon.co.uk for Victorinox knives which I have personally never used but I know are used quite extensively in the catering industry and are not expensive. I have some Global knives which are very good but my favourite knife is my Shun 8" cooks knife and is the one I use most of the time. Shun are very expensive knives - you could always put it on your Christmas list!! Hope this helps. Reply Quote
