What is the rule of thumb for which time size to use for different types of cakes?

Usually the recipe recommends a size. Usually you can go up or down a size, the cake will just be a slightly different depth. Or you can use a different shape.

Sometimes you can increase the ingredients in proportion to make a bigger cake. This can easily be done for a Victoria Sandwich and is often done for fruit cakes.

Never think you have to have the exactly specified tin. Some recipes suggest esoteric tin sizes which are the very devil to find.

And just to cheer you up; some recipes are just plain wrong and overflow!

It won't be trial and error if you follow Delia's recipes, and use the tin sizes she recommends....

Excellent advice, Noreen, but not all recipes are so meticulous and there are more recipes under the sun than just Delia's!
