cake making

every time I bake a cake it sinks in the middle.
I am very careful using correct ingredients and following the recipe.
Where am I going wrong?
Please help.

you might be better off re-posting this question in the can you help section.....

you can check out delias "how to cook" section, and look up baking.

could you be using the wrong size eggs? plain flour without baking powder? old flour? incorrect oven temps - sometimes our oven dials can be wrong! under or over creaming the butter and sugar? possibly even too eager to remove cake from tin. dependant on where you live altitude can cause baking problems too, espeically with breads.

try delias fool proof all in one method for classic sponge. works for me.

or for a classic vic sponge use a 3 egg to 6oz SR flour, 6 oz butter, 6 oz caster sugar, in 2 greased and base lined 8 inch tins bake at 180c for about 25 mins.

Opening the oven door before it is cooked, even for a sneaky peek, will cause the middle to flop.
