Aluminium pans.

I've heard you should not cook acidic foods - eg tomatoes, lemons, wine,vinegar in an uncoated aluminium pan, because of a chemical reaction with the metal - thus ruining the flavour of the food. How true is this, please?

Hello Gruney,

We believe aluminum pans to be safe but we wouldn’t leave anything acidic in the pan after it is cooked or store anything acidic in them.

I think its best to dispose of any type of pan that has visible signs of damage.
