Hi Can anyone advise me on problem with my daughters wedding cake.? I have made the classic xmas cake recipe in a 9inch round tin.(Made this one as a test cake) With ingredients as listed in Delia's book. (5 egg mixture) Cooked for 4 3/4 Hours at 140 degrees C , but when I came to cut it,(after two weeks) it was very crumbly and wouldn't slice. (Taste was wonderful !)
Bought an oven temperature gauge to check my oven temp is correct and it is. I fed the cake on the first day after it was cooled and again a week later. double wrapping in baking paper and then tin foil.
Need to get it right before I make the one for the day which is a 13 inch round. Or else they wont be able to slice it for the guests ! Any ideas ?

Hi, I think it needs to mature longer for it to cut more easily. i usually make mine about 3 months in advance, feed for the first month and then leave it double wrapped in an airtight tin.I think you can freeze them too

Many people on this site consider the cooking time is too long and the cake must be checked before the cooking time in the book. Though you know your oven best.
