Glace fruit Cake

I am making Delias Glace fruit Cake as an alternative wedding cake using one and a half times the recipe. (25cms or 10" round tin)

Can you advise cooking temperature and cooking times for a fan oven?

Hello Gracy,

If using a fan oven I would reduce the temperature down to 150C for the first hour, then cover it and reduce the temperature down to 130C. I would actually test it after it’s had it’s 2 hours at 130C. Then if its not done check it again 30 minuets later and so on until it’s springy in the centre.

Thanks for the reply Linsey. Can you also tell me how long it will keep?

I have already made one but have over cooked it, thinking that because it was one and a half times the original recipe it would need a lot more cooking.

Hello again,

It won’t keep as well as a rich fruitcake but we do make it a good month ahead and well wrapped in a cool dark place it’s always been good.

It freezes really well to.
