Storing fruit / Christmas cake

How long before I need the cake, should I make the classic Christmas cake? With it being the summer, am I going to have storage problems especially as once it is iced, it will have a 3 hr car journey? Thank you. It's for my mum's 80th birthday and my 13 yr old is desperate to decorate it, so I need to get it right!!

Ideally, if your making delias classic christmas cake, I would make a month/6weeks before required. To allow the cake to mature, wrap it in parchment paper, then double layer in tin foil and keep in a cool dark cupboard/drawer.

2 weeks before needing to be eaten, almond ice/marzipan the cake, allow a week for the marzipan to dry out under a tea towel, in cool cupboard, room. that allows the marzipan to dry out nicely, so its oils don't bleed through to the icing.

then a week before - ice it.

You can make the cake 6 months in advance, the flavour will improve, provided you have wrapped it correctly...

don't be tempted to ice it straight away - or you will end up making a job for yourself for having to remove the icing and marzipan if your storing it, several weeks/months before using, and then finding yourself having to remove the decorative features only to re-do them.
