Good morning Wendy,

The mascarpone alone might make it a bit heavy. Can you get any type of cream that will whip? If you can I would try a combination of whisked mascarpone and whipped cream.

For the alcohol you could substitute fruit juice (perhaps prune or pear would be nice??) or even water as long as the liquid goes in before you warm the chocolate and you keep the heat very low it shouldn’t seize. Remember 5 Delia tablespoons is 100mls.

Torte advice

Hi there Lindsey

Brilliant idea about mixing two types of cream. I can buy a cream that will whip but doesn't always maintain its shape alone but combined with the mascarpone I think it will work.

I will try pear juice and see how it works out. Not sure now if I will be making it as my friend says they might not be able to visit this month so it will be later on.

I will let you and Yummy know the result.
