Delias Shallow fried fish

on the cookery school.

has had me drooling.

I am wondering if it is ok to make the batter ahead of time, and maybe keep in the fridge? or covered on the counter top?

Or should it really be made just before cooking?

Shallow fried fish

Hello Sam,

It really is best made just before but it is very quickly done. You could have the flour, baking powder and seasoning all ready in a bowl and just add the water.
