Chicken Basque

Hi Lindsey,
I would like to make Chicken Basque in advance, early in the morning to serve in the evening. Does it reheat well in the oven or microwave, or is it best to prepare it to a certain stage then do the final hour of cooking in the oven just before serving?

Hello possum24,

You are not the first to ask this question.

When I make this and want to get ahead I make it up to the point – just before you add the stock. I refrigerate it once it is all cold and later on that day or the next I put it back on the top heat add the stock, wine and seasoning and carry on from there as per the recipe.
